🔹 Ham & Pineapple:
- 2.5 lbs boneless sliced ham (quarter ham)
- 1 (15 oz) can pineapple slices in 100% juice (juice reserved)
🔹 Glaze:
- ½ cup dark brown sugar
- ¼ cup champagne vinegar (or white wine vinegar)
- 2 tbsp coarse-ground Dijon mustard
- 1 tbsp unsulfured molasses
- 1 tbsp Worcestershire sauce
- 1 tsp ground allspice
- 1 tsp hickory liquid smoke
- Kosher salt & black pepper (to taste)
- 2 tbsp cornstarch + ½ cup water (for slurry)
👩🍳 Directions
✨ Step 1: Preheat oven to 325°F. Lightly grease a large roasting pan. Pat ham slices dry and arrange in the pan, fanning out slightly. Nestle pineapple slices between ham slices.
✨ Step 2: Make the Glaze
In a saucepan, combine pineapple juice, brown sugar, vinegar, mustard, molasses, Worcestershire, allspice, liquid smoke, salt, and pepper. Simmer for 4-5 minutes. Stir in cornstarch slurry, whisking until thickened.
✨ Step 3: First Bake
Pour half the glaze over the ham, making sure to get it between the slices. Cover with foil and bake for 30 minutes.
✨ Step 4: Caramelize the Glaze
Increase oven temp to 425°F, remove foil, and brush with remaining glaze. Bake uncovered for 15-20 minutes until caramelized.
✨ Step 5: Rest & Serve
Let ham rest for 10 minutes before serving. Drizzle with pan drippings and garnish with fresh herbs if desired.
