Double Baked Bacon & Egg Potatoes
Crispy potato skins stuffed with bacon, cheese, and a perfectly baked egg—your new favorite breakfast!
🛒 Ingredients
✔️ 2 medium russet potatoes, scrubbed clean
✔️ 2 tbsp olive oil or avocado oil
✔️ 4 slices bacon
✔️ 4 large eggs
✔️ ⅓ cup shredded cheddar cheese
✔️ 2 tbsp fresh chives, sliced
✔️ Sea salt & black pepper to taste
👩🍳 Directions
✨ Step 1: Preheat oven to 400°F. Pierce potatoes with a fork, rub with oil, and bake 30-40 minutes until tender.
✨ Step 2: Cool slightly, then cut in half lengthwise. Scoop out most of the flesh, leaving enough for structure. Season potato skins with salt & pepper.
✨ Step 3: Place one slice of bacon inside each potato half. Sprinkle with cheese, then carefully crack an egg into each one.
✨ Step 4: Return to oven and bake 15 minutes until whites are set but yolks remain slightly runny.
✨ Step 5: Garnish with fresh chives & black pepper. Serve hot & enjoy!
