Teriyaki Chicken and Pineapple Foil Packets


Ingredients (Serves 4):

  • 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup teriyaki sauce (store-bought or homemade)
  • 2 cups fresh pineapple chunks (or canned pineapple, drained)
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 small red onion, cut into chunks
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp ginger powder (or fresh grated ginger)
  • Optional: Sesame seeds and chopped green onions for garnish
  • Cooked rice or quinoa, for serving


Instructions:

1. Prepare the Foil Packets:

Preheat your grill, oven, or campfire to medium-high heat (about 375°F/190°C).

Cut 4 large sheets of heavy-duty aluminum foil (about 12x18 inches each).

2. Assemble the Packets:

In a large bowl, combine the chicken, pineapple, bell peppers, and red onion.

Add the olive oil, garlic powder, ginger powder, and teriyaki sauce. Toss to coat everything evenly.

Divide the mixture evenly among the 4 foil sheets, placing it in the center of each sheet.

3. Seal the Packets:

Fold the foil over the mixture, then fold and crimp the edges to create sealed packets. Leave a little room inside for steam to circulate.

4. Cook the Packets:

Grill Method: Place the packets on the grill and cook for 15-20 minutes, flipping halfway through, until the chicken is cooked through and the vegetables are tender.

Oven Method: Place the packets on a baking sheet and bake at 375°F (190°C) for 20-25 minutes, or until the chicken is cooked through.

Campfire Method: Place the packets on a grill grate over the campfire and cook for 15-20 minutes, turning occasionally.

5. Serve:

Carefully open the packets (watch out for steam!).

Garnish with sesame seeds and chopped green onions if desired.

Serve over cooked rice or quinoa for a complete meal.


Tips:

  1. For a homemade teriyaki sauce, mix 1/4 cup soy sauce, 2 tbsp honey, 1 tbsp rice vinegar, 1 tsp minced garlic, 1 tsp minced ginger, and 1 tsp cornstarch dissolved in 2 tbsp water. Simmer until thickened.
  2. Add other veggies like zucchini, broccoli, or snap peas for extra flavor and nutrition.
  3. If you prefer a spicier kick, add a dash of sriracha or red pepper flakes to the teriyaki sauce.
