One-Pot Chicken Parmesan Pasta
Ingredients:
- 1 tbsp olive oil
- 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 (24 oz) jar marinara sauce (or 3 cups homemade marinara)
- 2 cups chicken broth
- 1/2 cup heavy cream or half-and-half (optional, for creaminess)
- 8 oz (225g) penne pasta or your favorite short pasta
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley, chopped (for garnish)
Instructions:
1. Cook the Chicken:
Heat olive oil in a large skillet or Dutch oven over medium-high heat.
Season the chicken pieces with Italian seasoning, garlic powder, onion powder, salt, and pepper.
Add the chicken to the skillet and cook until browned on all sides, about 5-6 minutes. Remove the chicken and set aside.
2. SautΓ© the Aromatics:
In the same skillet, add the minced garlic and chopped onion. SautΓ© for 2-3 minutes until fragrant and softened.
3. Combine Ingredients:
Add the marinara sauce, chicken broth, and heavy cream (if using) to the skillet. Stir to combine.
Add the uncooked pasta and stir until it’s fully coated in the sauce.
Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for 12-15 minutes, stirring occasionally, until the pasta is cooked and the sauce has thickened.
4. Add the Chicken and Cheese:
Stir the cooked chicken back into the skillet.
Sprinkle the mozzarella and Parmesan cheese over the top. Cover the skillet and let it sit for 2-3 minutes until the cheese is melted.
5. Serve:
Garnish with fresh basil or parsley.
