Homemade Raspberry Swirl Cheesecake Bites Recipe
Creamy, sweet cheesecake bites with a buttery graham cracker crust and a tangy raspberry swirl topping!
Ingredients:
For the Crust:
- 1 cup graham cracker crumbs
- 3 tbsp sugar
- 4 tbsp melted butter
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
For the Raspberry Swirl:
- 1/2 cup raspberry preserves
For Garnish:
- Fresh raspberries
Directions:
Preheat the Oven:
Preheat oven to 325°F (163°C). Line a muffin tin with paper liners.
Make the Crust:
Combine graham cracker crumbs, sugar, and melted butter in a bowl.
Press about 1 tablespoon of the mixture into the bottom of each muffin liner.
Prepare the Cheesecake Filling:
Beat softened cream cheese and sugar in a bowl until smooth.
Add eggs one at a time, mixing well after each addition.
Stir in vanilla extract.
Assemble the Cheesecake Bites:
Spoon the cheesecake mixture over the prepared crusts in the muffin tin.
Add a small amount of raspberry preserves on top of each and swirl with a toothpick for a marbled effect.
Bake:
Bake for 20-25 minutes, or until the centers are set. Allow to cool completely in the tin.
Garnish and Serve:
Top each cheesecake bite with a fresh raspberry. Serve chilled for the best flavor.
