Maraschino Cherry Chocolate Chip Cookies
Soft, chewy cookies bursting with sweet maraschino cherries, rich chocolate chips, and a hint of almond – the ultimate festive treat!
Ingredients:
- 3 cups all-purpose flour
- 2 tsp cornstarch
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup unsalted butter, room temperature
- 1 1/4 cups light brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/8 tsp almond extract
- Pink gel food coloring
- 1 cup maraschino cherries, chopped
- 2 cups semi-sweet chocolate chips
Directions:
1. Prepare the Cherries:
Drain and chop maraschino cherries. Pat them dry with paper towels to remove excess moisture.
2. Preheat the Oven:
Heat oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
3. Mix Dry Ingredients:
In a medium bowl, combine flour, cornstarch, baking soda, and salt. Set aside.
4. Cream the Butter and Sugars:
In a large bowl, beat butter, light brown sugar, and granulated sugar for about 2 minutes until light and fluffy.
5. Add Wet Ingredients:
Beat in eggs, vanilla extract, and almond extract until combined.
Mix in pink gel food coloring to achieve the desired color.
6. Combine Wet and Dry Ingredients:
Gradually mix the dry ingredients into the wet ingredients until just combined.
7. Add Mix-ins:
Fold in chopped cherries and 1 cup of chocolate chips.
8. Shape and Bake:
Roll dough into balls and press a few extra chocolate chips on top of each.
Bake for 10-13 minutes, or until the cookies are set but still pink.
9. Cool:
Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
