German Chocolate Cookies

Rich, chewy chocolate cookies sandwiched with a luscious coconut pecan filling – the perfect indulgence for chocolate lovers!

Ingredients:

For the Cookies:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened

  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract

  • 1/2 cup evaporated milk
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1 large egg yolk, lightly beaten
  • 1/2 tsp vanilla extract
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup chopped pecans


Directions:

1. Prepare the Oven:

Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.

2. Mix the Dry Ingredients:

In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.

3. Cream Butter and Sugars:

In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).

4. Add Egg and Vanilla:

Beat in the egg and vanilla extract until combined.

5. Combine Wet and Dry Mixtures:

Gradually mix the dry ingredients into the wet ingredients until just combined.

10. Assemble the Cookies:

Spoon a dollop of frosting onto the flat side of one cookie and sandwich with another cookie.
