Strawberry Crumble Cheesecake Bars

Layers of creamy cheesecake, fresh strawberries, and crunchy crumble on a buttery graham cracker crust—divine!

📝 Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Strawberry Filling:

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1/4 cup heavy cream
  • 3 large eggs
  • 1 tsp vanilla extract

For the Crumble Topping:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cut into small pieces

🧁 Directions:

Prepare the Crust:

  • Preheat oven to 325°F (163°C).
  • In a bowl, mix graham cracker crumbs, sugar, and melted butter.
  • Press into a 9x13-inch baking dish. Bake for 8-10 minutes, then cool.

Make the Strawberry Filling:

  • Combine strawberries, sugar, lemon juice, and cornstarch in a saucepan.
  • Cook over medium heat until thickened. Cool completely.

Make the Cheesecake Filling:

  • Beat cream cheese and sugar until smooth.
  • Add sour cream, heavy cream, and mix.
  • Beat in eggs one at a time, then vanilla.

Make the Crumble Topping:

  • Mix flour, sugar, cinnamon, and salt.
  • Cut in cold butter until crumbly.

Assemble & Bake:

  • Spread cooled strawberry filling over the crust.
  • Pour cheesecake filling on top.
  • Sprinkle crumble over cheesecake layer.
  • Bake for 50-60 minutes until set and golden.

Cool & Serve:

  • Cool completely, refrigerate 4 hours or overnight. Slice and serve!
