Strawberry Crumble Cheesecake Bars
Layers of creamy cheesecake, fresh strawberries, and crunchy crumble on a buttery graham cracker crust—divine!
📝 Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Strawberry Filling:
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1/4 cup heavy cream
- 3 large eggs
- 1 tsp vanilla extract
For the Crumble Topping:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup unsalted butter, cold and cut into small pieces
🧁 Directions:
Prepare the Crust:
- Preheat oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press into a 9x13-inch baking dish. Bake for 8-10 minutes, then cool.
Make the Strawberry Filling:
- Combine strawberries, sugar, lemon juice, and cornstarch in a saucepan.
- Cook over medium heat until thickened. Cool completely.
Make the Cheesecake Filling:
- Beat cream cheese and sugar until smooth.
- Add sour cream, heavy cream, and mix.
- Beat in eggs one at a time, then vanilla.
Make the Crumble Topping:
- Mix flour, sugar, cinnamon, and salt.
- Cut in cold butter until crumbly.
Assemble & Bake:
- Spread cooled strawberry filling over the crust.
- Pour cheesecake filling on top.
- Sprinkle crumble over cheesecake layer.
- Bake for 50-60 minutes until set and golden.
Cool & Serve:
- Cool completely, refrigerate 4 hours or overnight. Slice and serve!
