Strawberry Tiramisu


Ingredients:

  • 1 pound fresh strawberries, hulled and sliced
  • ⅓ cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 (8 oz) package mascarpone cheese, softened
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (7 oz) package ladyfingers
  • ½ cup strawberry juice (from macerated strawberries or store-bought)
  • Cocoa powder or grated white chocolate for garnish (optional)

Directions:

Prepare the Strawberries: In a bowl, combine the sliced strawberries with granulated sugar and lemon juice. Toss and let sit for about 15 minutes until they release their juices.

Make the Cream Layer: In a mixing bowl, beat the mascarpone cheese, heavy whipping cream, powdered sugar, and vanilla extract until smooth and fluffy.

Assemble the Tiramisu: Quickly dip each ladyfinger into the strawberry juice and layer them at the bottom of a 9x9-inch dish.

Spread half of the mascarpone mixture over the ladyfingers. Top with half of the sliced strawberries.

Repeat the layers with more soaked ladyfingers, the remaining mascarpone mixture, and the rest of the strawberries.

Chill: Cover and refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld.

Serve: Dust with cocoa powder or grated white chocolate before serving.
