Shrimp with Cilantro Cream and Penne


Zesty Cilantro Cream Shrimp Pasta with Penne

Ingredients:

  • 12 oz penne pasta
  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1/2 cup plain Greek yogurt
  • 1/4 cup milk (or non-dairy milk of choice)
  • 1/3 cup chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon chili flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan (or dairy-free alternative)
  • Fresh cilantro and lime wedges for garnish

Directions:

  1. Cook penne pasta according to package instructions. Drain and set aside.
  2. In a skillet over medium heat, heat olive oil. Add shrimp, season with salt and pepper, and cook for 2–3 minutes on each side until pink and opaque. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 1 minute until fragrant.
  4. Reduce heat to low and stir in Greek yogurt and milk. Mix until smooth and creamy.
  5. Add chopped cilantro, lime juice, chili flakes, and Parmesan. Stir until the sauce is well combined and slightly thickened.
  6. Return shrimp to the skillet and toss to coat in the sauce.
  7. Add the cooked penne pasta and mix everything together.
  8. Serve immediately, garnished with fresh cilantro and a wedge of lime.
