Shrimp with Cilantro Cream and Penne
Zesty Cilantro Cream Shrimp Pasta with Penne
Ingredients:
- 12 oz penne pasta
- 1 lb large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1/2 cup plain Greek yogurt
- 1/4 cup milk (or non-dairy milk of choice)
- 1/3 cup chopped fresh cilantro
- 1 tablespoon fresh lime juice
- 1/4 teaspoon chili flakes (optional)
- Salt and pepper to taste
- 1/4 cup grated Parmesan (or dairy-free alternative)
- Fresh cilantro and lime wedges for garnish
Directions:
- Cook penne pasta according to package instructions. Drain and set aside.
- In a skillet over medium heat, heat olive oil. Add shrimp, season with salt and pepper, and cook for 2–3 minutes on each side until pink and opaque. Remove and set aside.
- In the same skillet, add garlic and sauté for 1 minute until fragrant.
- Reduce heat to low and stir in Greek yogurt and milk. Mix until smooth and creamy.
- Add chopped cilantro, lime juice, chili flakes, and Parmesan. Stir until the sauce is well combined and slightly thickened.
- Return shrimp to the skillet and toss to coat in the sauce.
- Add the cooked penne pasta and mix everything together.
- Serve immediately, garnished with fresh cilantro and a wedge of lime.
