M&M’s Cheesecake
A stunning no-bake dessert loaded with M&M’s and topped with white chocolate for a delightful treat!
Ingredients:
For the Crust:
- 15 Dublin Shortbread Cookies
- 4 tbsp butter (melted)
- ¼ cup M&M’s
- For the Cheesecake Filling:
- ⅓ cup heavy cream
- ⅓ cup powdered sugar
- 3 (8 oz) packages cream cheese (softened)
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 2 cups M&M’s
For the Topping:
- 3 squares white chocolate almond bark
- Blue food coloring gel
- M&M’s for sprinkling
For the Buttercream Frosting:
- 4 tbsp butter (softened)
- 4 oz cream cheese (softened)
- 1 tsp vanilla extract
- Pinch of salt
- 4 cups powdered sugar
- Food coloring gels (blue, green, yellow, orange)
Directions:
1️⃣ Prepare the Crust:
In a food processor, pulse shortbread cookies into fine crumbs.
Add melted butter and M&M’s, pulse until well combined.
Line the bottom of a springform pan with parchment paper, press the crumb mixture into the bottom, and place in the freezer to firm up.
2️⃣ Make the Cheesecake Filling:
In a stand mixer, whip heavy cream, powdered sugar, and vanilla until thick and smooth.
Add softened cream cheese, granulated sugar, and lemon juice, and mix until creamy.
Gently fold in 2 cups of M&M’s, creating a swirled look.
Pour the mixture over the chilled crust, smooth the top, and freeze for at least 8 hours or overnight.
3️⃣ Prepare the Topping:
Melt white chocolate almond bark in the microwave in 15-second intervals, stirring until smooth.
Add blue food coloring gel, stirring until you achieve the desired color.
Pour the colored chocolate over the frozen cheesecake, smooth the top, and sprinkle extra M&M’s on top. Return to the freezer to firm up.
4️⃣ Make the Buttercream Frosting:
In a stand mixer, cream together butter and cream cheese until smooth.
Add vanilla and a pinch of salt, blending well.
Gradually add powdered sugar, mixing until the frosting is smooth.
Divide the frosting into 4 bowls, and color each portion with a different food coloring gel (blue, green, yellow, orange).
Lay the colored frostings side by side on plastic wrap, roll them up, and place in a pastry bag with a fluted tip.
5️⃣ Pipe the Frosting:
Pipe the multicolored buttercream frosting on top of the cheesecake for a fun and decorative finish.
6️⃣ Serve:
Remove the cheesecake from the freezer and carefully release it from the springform pan.
Place the cheesecake on a serving platter, slice into pieces, and enjoy!
