Fudgy Mint Chocolate No-Bake Cookies
Gooey chocolate cookies topped with creamy mint frosting and rich chocolate ganache!
🥄 Ingredients
For the Cookies:
- 1/2 cup butter
- 2 cups granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup milk
- 1 tsp vanilla extract
- 1/2 tsp salt
- 3 1/2 cups quick oats
- 2 1/2 cups shredded unsweetened coconut
For the Frosting:
- 1/2 cup butter, room temperature
- 1 1/2 cups icing sugar
- 1 tbsp milk
- 1/2 tsp mint extract
- Green food coloring
For the Ganache:
- 3/4 cup semisweet chocolate chips
- 1 tbsp milk
- 1 tbsp butter
👩🍳 Directions
1️⃣ Prepare Cookie Sheets:
Line 2 cookie sheets with wax paper.
2️⃣ Make the Cookie Base:
In a large pot, combine butter, sugar, cocoa, and milk.
Bring to a boil over medium-high heat, stirring often. Boil for 1-2 minutes.
Stir in vanilla and salt, then add oats and coconut. Mix well.
Drop 24 spoonfuls onto wax paper. Chill in the fridge until set.
3️⃣ Make the Frosting:
Beat butter, icing sugar, and milk until creamy.
Add mint extract and green food coloring. Adjust consistency with more sugar or milk as needed.
Spread frosting on chilled cookies and refrigerate to set.
4️⃣ Make the Ganache:
In a small pot, melt chocolate chips, milk, and butter over very low heat, stirring constantly.
Let cool for 5-10 minutes. Spread over the frosted cookies and chill again.

Store in the fridge or freezer with wax paper between layers to prevent sticking.
