🛒 Ingredients
🔹 Cupcakes:
- 1 cup all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- ⅓ cup unsweetened cocoa powder
- ⅓ cup semisweet chocolate chips
- 1 tsp instant espresso powder (optional)
- ½ cup boiling water
- ½ cup sour cream or plain yogurt (not non-fat)
- ½ cup vegetable oil
- 2 large eggs
- ¾ cup granulated sugar
- 1 tsp vanilla extract
🔹 Filling:
- ½ cup strawberry jam
🔹 Strawberry Buttercream:
- ¾ cup freeze-dried strawberries
- ¾ cup unsalted butter, softened
- 3 cups powdered sugar
- ½ tsp vanilla extract
- 1 tbsp strawberry jam
- 2 tbsp milk or fresh strawberry purée
🔹 Garnish (Optional):
Sliced strawberries, mini chocolate chips, or chocolate drizzle
👩🍳 Directions
✨ Step 1: Preheat oven to 325°F & line a 12-cup muffin tin with liners.
✨ Step 2: Make the Cupcake Batter
Whisk cocoa powder, chocolate chips, espresso powder & boiling water until smooth. Add sour cream, oil, eggs, sugar, & vanilla.
✨ Step 3: Mix Dry Ingredients
In a separate bowl, whisk flour, baking soda, & salt. Slowly combine with wet ingredients.
✨ Step 4: Bake
Fill muffin cups ⅔ full & bake for 18-22 min until a toothpick comes out clean. Cool completely.
✨ Step 5: Prepare Buttercream
Process freeze-dried strawberries into powder. Beat butter, then gradually add sugar, strawberry powder, vanilla, jam, & milk.
✨ Step 6: Fill Cupcakes
Cut a small hole in each cupcake & fill with strawberry jam. Replace tops.
✨ Step 7: Frost & Garnish
Pipe buttercream onto cupcakes & decorate with fresh strawberries or chocolate.
