Ingredients
🔹 Pudding Base:
⅔ cup milk
150g Medjool dates, chopped
½ tsp baking soda
¼ cup cocoa powder
¼ cup hot water
⅓ cup salted butter, softened
⅜ cup brown sugar
2 tsp vanilla extract
1 whole egg + 1 egg yolk
🔹 Dry Ingredients:
½ cup all-purpose flour
¾ tsp baking powder
½ tsp espresso powder (optional)
¼ tsp salt
🔹 Chocolate Sauce:
1 cup heavy cream
½ cup dark chocolate chips
⅓ cup salted butter
⅜ cup brown sugar
2 tbsp cocoa powder
Pinch of salt
🔹 For Serving:
Vanilla ice cream

✨ Step 1: Prep the Ramekins
Preheat oven to 350°F. Butter 2 (14-oz) or 4 (8-oz) ramekins.
✨ Step 2: Make Date Paste
Pour hot milk over chopped dates, let sit 10 min. Blend into smooth paste.
✨ Step 3: Create Chocolate Base
Whisk cocoa powder with hot water until smooth. Beat butter, brown sugar, and vanilla. Mix in date paste, then eggs.
✨ Step 4: Combine & Bake
Sift flour, baking powder, espresso powder, and salt. Fold into wet ingredients. Divide into ramekins and bake for 28-33 min.
✨ Step 5: Make Chocolate Sauce
While baking, heat cream, chocolate, butter, brown sugar, cocoa, and salt in a saucepan until smooth.
✨ Step 6: Assemble & Serve
Poke holes in warm puddings, pour over half the sauce, let soak, then invert onto plates. Serve with ice cream and extra sauce!
