Pan-Seared Tilapia with Lemon Spinach Pasta

Zesty Lemon Spinach Pasta with Golden Tilapia Fillets
Ingredients:
- 4 tilapia fillets
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 10 oz spaghetti or linguine
- 2 tablespoons olive oil (for pasta)
- 3 cloves garlic, minced
- 6 cups fresh spinach, roughly chopped
- Zest and juice of 1 large lemon
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese (optional)
- 1/4 cup chopped fresh parsley
Directions:
- Cook the pasta in salted boiling water according to package instructions. Drain and set aside.
- While the pasta is cooking, season the tilapia fillets with salt, pepper, garlic powder, and paprika.
- Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat. Add the tilapia fillets and cook for about 3–4 minutes per side, or until golden and flaky. Remove from skillet and set aside.
- In the same skillet, add 2 more tablespoons olive oil and sauté the minced garlic until fragrant (about 30 seconds).
- Add the spinach and cook until wilted (about 2–3 minutes).
- Stir in the cooked pasta, lemon zest, lemon juice, and red pepper flakes. Toss everything to combine well.
- Adjust seasoning with salt and pepper to taste.
- Plate the pasta and top with the seared tilapia fillets. Sprinkle with Parmesan cheese (if using) and chopped parsley.
