Pan-Seared Tilapia with Lemon Spinach Pasta


Zesty Lemon Spinach Pasta with Golden Tilapia Fillets

Ingredients:

  • 4 tilapia fillets
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 10 oz spaghetti or linguine
  • 2 tablespoons olive oil (for pasta)
  • 3 cloves garlic, minced
  • 6 cups fresh spinach, roughly chopped
  • Zest and juice of 1 large lemon
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup chopped fresh parsley


Directions:

  1. Cook the pasta in salted boiling water according to package instructions. Drain and set aside.
  2. While the pasta is cooking, season the tilapia fillets with salt, pepper, garlic powder, and paprika.
  3. Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat. Add the tilapia fillets and cook for about 3–4 minutes per side, or until golden and flaky. Remove from skillet and set aside.
  4. In the same skillet, add 2 more tablespoons olive oil and sauté the minced garlic until fragrant (about 30 seconds).
  5. Add the spinach and cook until wilted (about 2–3 minutes).
  6. Stir in the cooked pasta, lemon zest, lemon juice, and red pepper flakes. Toss everything to combine well.
  7. Adjust seasoning with salt and pepper to taste.
  8. Plate the pasta and top with the seared tilapia fillets. Sprinkle with Parmesan cheese (if using) and chopped parsley.
