Easy No-Chill Monster Cookies

🛒 Ingredients
🔹 Wet Ingredients:
- ½ cup unsalted butter, room temp
- 1 cup packed light brown sugar
- ¼ cup granulated sugar
- ⅓ cup smooth peanut butter
- 1 large egg + 1 egg yolk, room temp
- 2 tsp vanilla extract
- 2 tsp maple syrup
🔹 Dry Ingredients:
- 1¼ cups all-purpose flour
- 1 cup old-fashioned rolled oats
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp kosher salt
🔹 Mix-ins:
- ¾ cup semi-sweet chocolate chips (+ extra for topping)
- ¾ cup M&Ms (+ extra for topping)
👩🍳 Directions
✨ Step 1: Preheat oven to 350°F. Line a baking sheet with parchment paper.
✨ Step 2: Cream butter & sugars until fluffy. Mix in peanut butter, then beat in eggs, vanilla, and maple syrup.
✨ Step 3: In a separate bowl, whisk flour, oats, baking soda, baking powder, and salt. Slowly mix into wet ingredients until just combined.
✨ Step 4: Fold in chocolate chips & M&Ms.
✨ Step 5: Scoop 2-ounce dough balls onto the baking sheet, 3 inches apart. Gently press tops slightly & add extra chips/M&Ms.
✨ Step 6: Bake 9-11 min until edges are set but centers are slightly underbaked. Cool on a wire rack.
