Coconut Shrimp with Lime Herb Noodles
Crispy Coconut Shrimp with Zesty Lime-Herb Noodle Nest
Ingredients:
- 1 lb (450g) large shrimp, peeled and deveined
- 1 cup shredded unsweetened coconut
- 1/2 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- Olive oil (for shallow frying)
For the Lime Herb Noodles:
- 8 oz (225g) rice noodles or thin spaghetti
- 2 tablespoons olive oil
- Zest and juice of 1 lime
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons fresh basil, chopped
- 1 tablespoon green onions, sliced
- Salt, to taste
Directions:
- Cook the noodles according to package instructions. Drain and rinse under cold water. Set aside.
- In a large bowl, mix the coconut and panko. In another bowl, combine flour with garlic powder, paprika, salt, and pepper.
- Dredge each shrimp in the seasoned flour, dip in beaten eggs, then coat in the coconut-panko mixture.
- Heat a thin layer of olive oil in a skillet over medium heat. Fry shrimp in batches for 2-3 minutes per side until golden and crispy. Drain on paper towels.
- Toss the noodles with olive oil, lime zest, lime juice, herbs, and green onions. Season to taste with salt.
- Serve the crispy coconut shrimp over the lime herb noodles and garnish with extra lime wedges and fresh herbs if desired.
