Caprese Stuffed Garlic Butter Portobellos

Ingredients:
For the Mushrooms:
- 4 large portobello mushrooms, stems removed
- 2 tablespoons olive oil
- Salt and pepper, to taste
For the Garlic Butter:
- 3 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
For the Caprese Filling:
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella cheese, diced or small balls (bocconcini)
- 1/4 cup fresh basil leaves, chopped
- 1 tablespoon balsamic glaze (plus extra for drizzling)
- Salt and pepper, to taste
Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
Prepare the Mushrooms:
Clean the portobello mushrooms with a damp paper towel to remove any dirt. Remove the stems and gently scrape out the gills with a spoon (optional, but it helps reduce moisture).
Brush both sides of the mushrooms with olive oil and season with salt and pepper. Place them cap-side down on the prepared baking sheet.
Make the Garlic Butter:
In a small bowl, mix the melted butter, minced garlic, and chopped parsley. Brush the inside of each mushroom with the garlic butter mixture.
Prepare the Caprese Filling:
In a medium bowl, combine the cherry tomatoes, mozzarella, basil, and balsamic glaze. Season with salt and pepper to taste.
Stuff the Mushrooms:
Divide the Caprese filling evenly among the mushrooms, pressing it gently into the cavities.
Bake:
Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.
Serve:
Remove from the oven and drizzle with additional balsamic glaze if desired. Serve warm as an appetizer, side dish, or light main course.
Tips:
For a richer flavor, you can add a sprinkle of grated Parmesan cheese on top before baking.
