Ingredients:
For the Muffins:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar

Instructions:
1. Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Line a muffin tin with paper liners or grease the cups.
- Make the Cream Cheese Filling:
- In a medium bowl, beat the cream cheese until smooth.
- Add the sugar, egg, and vanilla extract, and beat until well combined and creamy. Set aside.
2. Make the Muffin Batter:
- In a large bowl, whisk together the flour, sugar, baking soda, cocoa powder, and salt.
- In another bowl, whisk together the eggs, vegetable oil, buttermilk, red food coloring, white vinegar, and vanilla extract.
