Red Velvet Muffins with Cream Cheese Filling❤🤍🧁


Ingredients:

For the Muffins:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cocoa powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk
  • 2 tablespoons red food coloring (adjust for desired color)
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract

Instructions:

    1. Preheat and Prepare:

  1.     Preheat your oven to 350°F (175°C).
  2.     Line a muffin tin with paper liners or grease the cups.
  3.     Make the Cream Cheese Filling:
  4.     In a medium bowl, beat the cream cheese until smooth.
  5.     Add the sugar, egg, and vanilla extract, and beat until well combined and creamy. Set aside.

2. Make the Muffin Batter:

  1. In a large bowl, whisk together the flour, sugar, baking soda, cocoa powder, and salt.
  2. In another bowl, whisk together the eggs, vegetable oil, buttermilk, red food coloring, white vinegar, and vanilla extract.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

    3. Assemble the Muffins:

  1. Fill each muffin cup about halfway with the red velvet batter.
  2. Add a spoonful of the cream cheese filling to the center of each muffin cup.
  3. Top with more red velvet batter until each cup is about 3/4 full.

    4. Bake:

  1. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the red velvet part of the muffin comes out clean.
  2. Be careful not to insert the toothpick into the cream cheese filling, as it may not come out clean.
