Strawberry Poke Cake

 

While this is certainly one of our prettiest poke cakes, don’t let its impressive looks intimidate you. This sensational strawberry poke cake only takes 15 minutes of prep and six ingredients to make. A tender-crumbed white cake is poked and filled with strawberry Jell-O™ so each slice boasts a vibrant interior. Top with fluffy frosting and fresh strawberries for a dessert that’s truly ready to party.


Ingredients

  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • 1 cup boiling water
  • 1 box (4-serving size) Jell-O™ strawberry-flavored gelatin
  • 1 tub (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • 12 fresh strawberries, cut in half


Instructions

  1. Step 1 Heat oven to 350°F (325°F for dark or nonstick pan). Make and bake cake as directed on box for 13x9-inch pan, using water, oil and egg whites. Cool in pan on cooling rack 20 minutes.
  2. Step 2 Meanwhile, in medium bowl, pour boiling water on gelatin; stir until gelatin is dissolved. Poke cake every inch with handle of wooden spoon or tines of fork halfway into cake. Carefully pour strawberry gelatin evenly over top of cake. Cool completely, about 1 hour.
  3. Step 3 Spoon and spread frosting over top of cake. Cut into 4 rows by 3 rows. Garnish each piece of cake with strawberries. Store loosely covered in refrigerator.


Tips from the Betty Crocker Kitchens

  • tip 1 For other colorful cakes, use a different flavor of gelatin for the strawberry gelatin.
  • tip 2 Try topping pieces of cake with a fresh fruit topping. Slice strawberries and place in small bowl. Add 1 to 2 tablespoons sugar; stir and let stand 5 to 10 minutes or until berries have a juicy consistency. Spoon over each piece of cake.
  • tip 3 Instead of frosting, try topping this cake with homemade whipped cream or Cool Whip whipped topping. Either way you can’t go wrong!
