Soy Ginger Sauce

Ingredients

  • 1/2 cup soy sauce
  • 1/2 cup rice vinegar
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon toasted sesame seeds
  • 1 tablespoon minced fresh chives
  • 1 tablespoon minced fresh cilantro stems 
  • 1/2 tablespoon chili oil
  • Juice of 1/4 lime
  • Salt, to taste
  • Freshly ground black pepper, to taste


Method

  1. In a medium pot, combine the soy sauce, vinegar, ginger, sesame oil, sesame seeds, chives, cilantro stems, chili oil, lime juice, 1 tablespoon water, and a pinch of salt and pepper.
  2. Set the pot over medium-low heat.
  3. Increase the heat to high and right when you start to see bubbles (around 6 to 8 minutes), take the pot off the heat.
  4. Let cool before using. Yield should be 1 1/4 cups
  5. Store in an airtight container in the refrigerator for up to 2 weeks.
